Well, I’m afraid to say that trying to eat local pretty much went out the window this week. But I’m feeling ok about it.
I was preparing to run a workshop on Saturday (it went really well, thank you!), which meant that I had absolutely no mental capacity or time for shopping, planning or cooking meals. It was more important to look after ourselves and make sure we ate something without adding more pressure to our week.
That said, looking back on the week, even without thinking about it we didn’t do too badly. We had cereal with soya milk for a couple of breakfasts. I was planning to try making our own rice milk, as rice is one of our exceptions, but of course that didn’t happen! The cereal was Jordans, which is mostly grown in the UK, but also contains coconut – not so local. Also had toast – Cobs Bakery bread with Lincolnshire butter and the yummy blackcurrant jam my colleague made, so did ok there. (On a side note I’ve actually splashed out on a posh insulated butter dish so we can have ‘spreadable’ local butter.)
Lunches took a slide – didn’t have any leftovers and late nights meant late rising and no time in the mornings, so mostly ended up buying sandwiches. But I’ve still been enjoying local strawberries.
For dinners we fell back on jars of pasta sauce and a takeaway curry, but on Friday Simon made a delicious risotto with local courgette, mushrooms and peppers. We managed a mostly local ratatouille on Sunday, the only non-local addition being tinned tomatoes.
To be honest when I started this challenge I thought I’d be chuffed if we lasted a week. So the fact that we’ve managed to get this far is great, and there are lots of things I know we will carry on doing.
