After a weekend break at home, we arrived back yesterday fresh and keen for the last 2 days of our challenge. Yesterday was the standard sandwich and leftover bean stew, so we decided not to bore you with that. However, for our final meal together we made a marrow extravaganza, in a bid to use up our remaining ingredients…
Recipe for stuffed oven-baked mammoth marrow:
1 onion
3 garlic cloves
2 potatoes
2 carrots
300g couscous
half a yellow pepper
buckets of cumin
fresh coriander
black pepper
a sprinkling of grated cheese
1 mammoth marrow
Simply cook up the veg and couscous, then stuff inside the scooped out marrow halves and bake in the oven for 20 minutes. We went on a shopping splurge and bought some Somerset cheddar from the Co-op with the remaining funds in our budget, and grated it on top of the dish just before serving.
We’ve had a wonderful week, and hopefully have shown that you can live on tasty, local, and organic food for less than 3 pounds a day, not to mention having a lot of fun doing it! We totaled up our final costs: £19.99 pounds each, which works out at £2.86/day. We also have lots of leftover couscous, lentils and muesli, so in effect we underpaid and overbought! Which means we did actually have a little money spare for money for cheeky snacks, which we will remember when we do the challenge again in October.
