What a great time of year for food, even if the weather is a bit of a pain! Yesterday we had a wonderful meal of chard frittata, a salad of beefsteak tomatoes with basil, and broad bean hummus. These were my first beefsteak tomatoes of the year, which I got from the Wild Country Organics stall at the Sunday market (grown at Great Abington). (We grew our own beefsteak tomatoes last year but this year the tomatoes have been a dead loss because of the weather.) The broad beans (from Mayflower Organics at the Sunday market) were a bit late in the season and starting to get a bit floury, so instead of cooking and eating them as they are, which I like to do with the younger ones, I steamed them and then used the blender to make broad bean hummus – just mixing in rape seed oil, salt and pepper, a dash of cider vinegar and lots of crushed garlic + a little of the bean cooking water. (I didn’t even bother to remove the skins, which a lot of people to do to make it smoother, as I quite like it chunky and it’s fiddly to skin small things like that!) The hummus was great! One portion of this meal cost about £2.50.
Chard Frittata
Sue has a great recipe for frittata in one of her posts – my one for chard frittata is simpler – just saute the chopped, seasoned chard and then add six eggs beaten with a bit of water – cook on the stove and finish off under a hot grill until browned.
