Spiced red lentil soup

Ingredients

  • 2 carrots
  • ½ leek
  • 1 onion
  • 4 garlic cloves
  • 1 red chilli
  • Sunflower oil
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon ground ginger
  • 1 tin coconut milk
  • 1 litre vegetable stock
  • 1-2 tablespoons fish sauce
  • Juice of 1 lime
  • 1 large handful red lentils
  • Salt to taste

Method

  1. Peel and grate the carrots on the coarse side of a grating iron. Peel and thinly slice the onion and garlic. Clean and thinly slice the leek. Halve, de-seed and thinly slice the red chilli.
  2. Heat the oil and soften the vegetables.
  3. Add the spices and cook for a couple of minutes.
  4. Add the coconut milk, stock, fish sauce and lime juice. Bring to the boil.
  5. Add the red lentils and simmer until soft – approximately 10 minutes.
  6. Check the seasoning and serve piping hot.
