WWII Rationing Challenge: Week 1 Day 7, Sunday 7th June

I can’t believe how fast the first week has gone. Time to take stock and plan for the next week.

Other than two rashers of bacon, I ate no meat until Friday, when I went to my local butcher and asked what I could get for £2.20  (which is what 1s 2d is worth just about these days). I came away with a small handful of mince and two sausages. So I consulted the internet and came up with two ideas. The first was for mince slices, which involves mixing the cooked mince with mashed potato (I used half a jacket potato cooked in the microwave), breadcrumbs and seasoning. I had a stale chunk of bread left, so it was an ideal way of using it up. When mixed together, the mince is shaped into blocks or flatter slices, and fried with a little oil or margarine. Served with vegetables it made a very tasty meal. Here is the link for the recipe.

With the sausages I made sausage pancakes. I had used my one egg, and I remember reading somewhere that it is possible to make eggless batter by using flour, custard powder and milk, so I gave it a go. It looked alright, if somewhat yellow, and it cooked reasonably well, but I can’t say it was as good as a pancake made with egg. However, it looked attractive wrapped round the cooked sausages. I served it with the remains of the jacket potato from the mince slices, some broccoli and a white sauce. If anyone else has a go at making eggless pancakes, I would be delighted to hear how you get on.

I reviewed my rations this evening, and this is how I have fared.  I have a very little butter left, a little oil, about half a pint of milk, no cheese, no chocolate, no meat, no bacon or ham, but almost all my sugar ration. I will save the sugar for next week – with any luck it might be used to sweeten some gooseberries fresh from the garden!

I am really pleased that I have signed up for the whole month, as I feel I am just getting into the swing of thinking differently about shopping and cooking, and there are lots of recipe ideas I would still like to try. Even better, I have lost a bit of weight, despite feeling that I have had plenty to eat!
